Ingredients

- 1 cup fresh cranberries
- 1 1/2 cups pomegranate seeds (from about 1 large pomegranate)
- 2 large oranges, peeled and segmented
- 2 medium apples, diced
- 1 cup seedless red grapes, halved
- 1 cup pineapple, diced
- 2 tablespoons honey or maple syrup
- 1 tablespoon fresh lime juice
- 1 teaspoon orange zest
- 2 tablespoons fresh mint leaves, finely chopped
Instructions
- Rinse the cranberries and place them in a food processor. Pulse gently until coarsely chopped (do not puree).
- In a large mixing bowl, combine chopped cranberries, pomegranate seeds, orange segments, diced apples, grapes, and pineapple.
- In a small bowl, whisk together honey or maple syrup, lime juice, and orange zest until well combined.
- Pour the dressing over the fruit mixture and toss gently to coat all the fruit evenly.
- Chill the salad in the refrigerator for at least 30 minutes to allow flavors to meld.
- Just before serving, sprinkle with chopped fresh mint if desired.
Notes
- Feel free to substitute honey with maple syrup for a vegan option.
- For a more tropical flavor, consider adding coconut flakes.
