Description

A refreshing and vibrant fruit salad featuring cranberries, pomegranate seeds, and a zesty dressing.


Ingredients

  • 1 cup fresh cranberries
  • 1 1/2 cups pomegranate seeds (from about 1 large pomegranate)
  • 2 large oranges, peeled and segmented
  • 2 medium apples, diced
  • 1 cup seedless red grapes, halved
  • 1 cup pineapple, diced
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon fresh lime juice
  • 1 teaspoon orange zest
  • 2 tablespoons fresh mint leaves, finely chopped

Instructions

  1. Rinse the cranberries and place them in a food processor. Pulse gently until coarsely chopped (do not puree).
  2. In a large mixing bowl, combine chopped cranberries, pomegranate seeds, orange segments, diced apples, grapes, and pineapple.
  3. In a small bowl, whisk together honey or maple syrup, lime juice, and orange zest until well combined.
  4. Pour the dressing over the fruit mixture and toss gently to coat all the fruit evenly.
  5. Chill the salad in the refrigerator for at least 30 minutes to allow flavors to meld.
  6. Just before serving, sprinkle with chopped fresh mint if desired.

Notes

  • Feel free to substitute honey with maple syrup for a vegan option.
  • For a more tropical flavor, consider adding coconut flakes.
