- 1/2 cup almond butter or nut butter of your choice
- 1/4 cup honey or maple syrup

- 1/4 teaspoon salt
Instructions
- In a mixing bowl, combine the rolled oats, chopped dried cranberries, and chopped pistachios. Mix well.
- In a separate bowl, combine the almond butter, honey (or maple syrup), vanilla extract, and salt. Stir until the mixture is smooth and well-blended.
- Pour the wet mixture into the bowl with the dry ingredients. Stir to combine, ensuring that all the oats and fruits are coated evenly.
- Using your hands, take small portions of the mixture and roll them into bite-sized balls, aiming for about one inch in diameter.
- Place the energy bites on a parchment-lined tray and refrigerate for about 30 minutes to firm up.
- Once set, enjoy immediately, or transfer them to an airtight container.
