Description

A delightful appetizer made with cream cheese, cheddar, cranberries, and pistachios, perfect for parties.


Ingredients

  • 8 oz cream cheese (softened)
  • 1 cup shredded cheddar cheese
  • 1 cup fresh cranberries (chopped)
  • 1 cup unsalted pistachios (chopped)
  • 2 tablespoons fresh parsley (finely chopped)
  • 1 tablespoon honey (optional)
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, combine the softened cream cheese and shredded cheddar cheese. Use a hand mixer or spatula to blend until creamy and well combined.
  2. Fold in the chopped cranberries, honey (if using), salt, and pepper. Mix until everything is evenly distributed.
  3. Lay a piece of plastic wrap on your working surface. Spoon the cheese mixture onto the plastic, shaping it into a log. Roll the plastic wrap around the mixture and twist the ends to secure it tightly. Chill in the refrigerator for at least 30 minutes.
  4. Once chilled, unwrap the cheese log and roll it in the chopped pistachios until fully coated. Gently press them in to help them adhere.
  5. Place the cheese log on a serving platter and garnish with chopped parsley for a pop of color. Serve with crackers, veggie sticks, or your dipper of choice.
