- 1 cup shredded cheddar cheese
- 1 cup fresh cranberries (chopped)
- 1 cup unsalted pistachios (chopped)
- 2 tablespoons fresh parsley (finely chopped)
- 1 tablespoon honey (optional)
- Salt and pepper to taste
Instructions
- In a mixing bowl, combine the softened cream cheese and shredded cheddar cheese. Use a hand mixer or spatula to blend until creamy and well combined.
- Fold in the chopped cranberries, honey (if using), salt, and pepper. Mix until everything is evenly distributed.
- Lay a piece of plastic wrap on your working surface. Spoon the cheese mixture onto the plastic, shaping it into a log. Roll the plastic wrap around the mixture and twist the ends to secure it tightly. Chill in the refrigerator for at least 30 minutes.
- Once chilled, unwrap the cheese log and roll it in the chopped pistachios until fully coated. Gently press them in to help them adhere.
- Place the cheese log on a serving platter and garnish with chopped parsley for a pop of color. Serve with crackers, veggie sticks, or your dipper of choice.
