- 8 oz cream cheese, softened
- 1 cup cheddar cheese, grated
- 1 cup pecans, chopped
- 1/2 cup dried cranberries, chopped
- 1/4 cup fresh chives, chopped
Instructions
- In a small mixing bowl, combine the chopped pecans, dried cranberries, and chives.
- In a large mixing bowl, mix the softened cream cheese and grated cheddar cheese together. Stir in half of the pecan mixture.
- Place the cheese mixture onto a piece of cling film and mold it into a log shape. Wrap it tightly and refrigerate for at least one hour.
- Once chilled, spread the remaining pecan mixture on a chopping board. Unwrap the cheese log and coat it evenly with the pecan mixture.
- Slice the cheese log with a sharp knife and serve with crackers.
