Instructions

Step 1: Prepare the Pork Chops

  1. Pat the pork chops dry with paper towels to help the breading stick better.
  2. In a shallow dish, mix together flour, salt, pepper, garlic powder, onion powder, smoked paprika, and cayenne pepper.
  3. In a separate bowl, whisk together egg and buttermilk.

Step 2: Bread the Pork Chops

  1. Dredge each pork chop in the flour mixture, then dip it in the egg mixture, and coat again in the flour mixture. Press the flour onto the pork chops to create a thick, crispy coating.
  2. Place the breaded pork chops on a plate and let them rest for 5-10 minutes—this helps the coating stick better when frying.

Step 3: Fry the Pork Chops

  1. Heat ½ cup vegetable oil in a large cast-iron skillet over medium-high heat.
  2. Once the oil is hot (about 350°F/175°C), carefully place the pork chops in the skillet. Cook for 3-4 minutes per side, or until golden brown and crispy.

  6. Add the cooked bacon back into the gravy and stir.
