Unlike traditional creamy tomato soups that rely on heavy cream, cottage cheese blends seamlessly into the broth, adding a smooth texture, subtle tang, and a boost of protein without the extra fat. It’s the perfect cozy meal that’s light, wholesome, and easy to make in under 30 minutes.

Instructions

Step 1: Sauté the Aromatics

  1. Heat olive oil in a large pot over medium heat.

Step 2: Simmer the Tomato Base

Step 3: Blend the Cottage Cheese Mixture

  1. While the soup simmers, blend the cottage cheese, milk, and Parmesan in a blender until completely smooth.

Step 4: Blend & Combine

  1. Use an immersion blender to puree the soup until smooth (or carefully transfer to a blender in batches).
  2. Stir in the cottage cheese mixture, mixing well until fully combined.
  3. Simmer for 2 more minutes to let the flavors meld.
