A healthy and delicious sandwich made with chicken and cottage cheese, perfect for a quick meal.
Ingredients

- 2 cups cooked chicken, shredded or chopped (rotisserie chicken works great!)
- 1 cup cottage cheese (small curd recommended)
- 2 tbsp mayonnaise
- 1/4 cup finely chopped celery
- 1/4 cup finely chopped red onion
- 1/4 cup dried cranberries (optional, for sweetness)
- 1 tbsp Dijon mustard
- 1/4 tsp garlic powder
- Salt and pepper to taste
- 8 slices of whole-grain bread or 4 sandwich rolls
- Optional toppings: lettuce leaves, sliced tomato
Instructions
- In a large bowl, combine chicken, cottage cheese, mayonnaise, celery, red onion, cranberries (if using), Dijon mustard, garlic powder, salt, and pepper. Mix well until fully combined.
- Lay out the bread slices or sandwich rolls. Add a layer of lettuce and sliced tomato, if desired. Spoon the chicken salad mixture onto one slice of bread or the bottom half of the roll, then top with the other slice or half.
- Cut in half for easier eating and serve immediately. Perfect with a side of chips, fresh fruit, or a simple salad.
Notes
- Rotisserie chicken can save prep time.
- Customize with your choice of toppings.
- This sandwich can be made ahead and stored in the refrigerator for several hours.
