Streusel Topping:

  • ½ cup brown sugar
  • 1 teaspoon cinnamon

Instructions

  • Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large bowl, cream together the sugar and softened butter until fluffy.
  • Beat in the eggs one at a time, followed by the milk and vanilla extract.
  • In another bowl, whisk together flour, baking powder, and baking soda. Gradually add to the wet ingredients and mix until just combined.
  • In a small bowl, prepare the streusel by combining brown sugar, cinnamon, cubed butter, and flour. Mix with a fork until crumbly.
  • Spoon batter into the muffin liners, filling them ⅔ full. Top each with streusel mixture.
  • Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  • Let muffins cool for 5 minutes in the pan before transferring them to a wire rack.
