Muffins:
- 2 cups all-purpose flour

- ½ cup unsalted butter (softened)

Streusel Topping:
- ½ cup brown sugar
- 1 teaspoon cinnamon
- ¼ cup unsalted butter (cold, cubed)
- ⅓ cup all-purpose flour
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, cream together the sugar and softened butter until fluffy.
- Beat in the eggs one at a time, followed by the milk and vanilla extract.
- In another bowl, whisk together flour, baking powder, and baking soda. Gradually add to the wet ingredients and mix until just combined.
- In a small bowl, prepare the streusel by combining brown sugar, cinnamon, cubed butter, and flour. Mix with a fork until crumbly.
- Spoon batter into the muffin liners, filling them ⅔ full. Top each with streusel mixture.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let muffins cool for 5 minutes in the pan before transferring them to a wire rack.
Notes
- For added moisture, substitute half the butter with unsweetened applesauce.
