Instructions
- Line a cookie sheet with a silicone mat.
- In a food processor, pulse the powdered sugar and almond flour until combined and sift it into a large bowl.
- Beat the egg whites on low speed until frothy, then gradually add granulated sugar and beat until stiff peaks form.
- Gently fold the meringue into the dry ingredients until the batter is smooth.
- Transfer the batter to a piping bag and pipe 1-inch disks onto the prepared cookie sheet.
- Tap the cookie sheet to bring air bubbles to the surface and pop any remaining bubbles.
- Let the macarons rest for an hour to develop a dry skin.
- Preheat the oven to 280°F (140°C) and bake for 15 minutes, rotating the sheet halfway through.
- Allow to cool completely before removing from the mat.
- Prepare the cream cheese filling by beating together butter and cream cheese until creamy, then add powdered sugar and vanilla, adjusting consistency with heavy cream as needed.
- Mix together the softened butter, brown sugar, and cinnamon for the cinnamon filling.
- Combine the two fillings until slightly streaky.
- Assemble the macarons by piping filling between two shells.
