Description

Delicious macaron treats combining the flavors of cinnamon rolls and cream cheese frosting.


Ingredients

  • 1 cup (110 grams) almond flour
  • 3 large (100 grams) egg whites
  • ¼ cup (50 grams) granulated sugar
  • Ground cinnamon as needed
  • 2 ounces cream cheese, softened
  • 2 tablespoons (28 grams) unsalted butter, softened
  • 1 cup (113 grams) powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon heavy cream or milk
  • 2 tablespoons (28 grams) unsalted butter, softened
  • 3 tablespoons (39 grams) brown sugar, packed
  • 1 teaspoon ground cinnamon

Instructions

  1. Line a cookie sheet with a silicone mat.
  2. In a food processor, pulse the powdered sugar and almond flour until combined and sift it into a large bowl.
  3. Beat the egg whites on low speed until frothy, then gradually add granulated sugar and beat until stiff peaks form.
  4. Gently fold the meringue into the dry ingredients until the batter is smooth.
  5. Transfer the batter to a piping bag and pipe 1-inch disks onto the prepared cookie sheet.
  6. Tap the cookie sheet to bring air bubbles to the surface and pop any remaining bubbles.
  7. Let the macarons rest for an hour to develop a dry skin.
  8. Preheat the oven to 280°F (140°C) and bake for 15 minutes, rotating the sheet halfway through.
  9. Allow to cool completely before removing from the mat.
  10. Prepare the cream cheese filling by beating together butter and cream cheese until creamy, then add powdered sugar and vanilla, adjusting consistency with heavy cream as needed.
  11. Mix together the softened butter, brown sugar, and cinnamon for the cinnamon filling.
  12. Combine the two fillings until slightly streaky.
  13. Assemble the macarons by piping filling between two shells.
