These Cinnamon Roll French Toast Bites are an irresistible mashup of two breakfast favorites. Soft, gooey cinnamon rolls are cubed, dunked in a rich egg mixture, and pan-fried until golden brown then served warm with powdered sugar and syrup or icing. Quick to make and even quicker to disappear!
Ingredients
-
1 can refrigerated cinnamon rolls (with icing packet)
-
2 large eggs
-
¼ cup milk
-
1 teaspoon vanilla extract
-
½ teaspoon ground cinnamon
-
2 tablespoons butter

Maple syrup or icing (from the cinnamon rolls, optional for serving)
Instructions
-
Open the cinnamon rolls and cut each roll into quarters.
-
In a medium bowl, whisk together eggs, milk, vanilla, and ground cinnamon.
-
Add the cinnamon roll pieces to the bowl and gently toss to coat. Let sit for 1–2 minutes.
-
In a large skillet, melt butter over medium heat.
-
Add soaked cinnamon roll bites in batches and cook for 2–3 minutes per side, or until golden brown and cooked through.
-
Transfer to a plate, dust with powdered sugar, and drizzle with maple syrup or the included icing. Serve warm!
Notes
-
You can use flavored coffee creamer in place of milk for a fun twist.
-
Serve with fresh fruit for a brunch-worthy spread.
-
For extra crisp edges, let the cinnamon bites sit an extra minute in the pan.
