Description

A delightful twist on traditional focaccia, this Cinnamon Roll Focaccia combines the fluffy texture of focaccia bread with the sweet flavors of cinnamon rolls, topped with a luscious vanilla icing.


Ingredients

  • 2 cups warm water, heated to about 110
  • 2 tsp active dry yeast
  • 1 tsp white granulated sugar
  • 4 cups bread flour, spooned and leveled
  • 1 1/2 tsp salt
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter, melted
  • 6 tbsp brown butter
  • 1/3 cup light brown sugar
  • 2 tsp cinnamon
  • 1 cup powdered sugar, sifted
  • 1 tsp vanilla extract
  • 2 1/2 tbsp milk, adjust for desired consistency

Instructions

  1. Activate the yeast. In a small bowl, combine warm water and granulated sugar. Sprinkle yeast over the top and let sit for 10-15 minutes until foamy.
  2. Mix the dough. In a large bowl, whisk together flour and salt. Pour in the activated yeast mixture and olive oil, stirring until a sticky dough forms. Rub the surface with olive oil.
  3. First rise. Cover with a damp towel or plastic wrap and refrigerate for at least 12 hours.
  4. Second rise. Grease a 9×13-inch baking pan, pour in melted butter, and gently deflate the dough. Place the dough into the pan, cover, and let rise for 1 1/2-2 hours.
  5. Make the brown butter. Melt butter in a small saucepan over medium heat, stirring until golden-amber. Remove from heat and let cool for 10 minutes.
  6. Make the cinnamon topping. Add brown sugar and cinnamon to the browned butter and mix until dissolved.
  7. Dimple the dough. Preheat oven to 450℉. Press dimples all over the risen dough, then drizzle the cinnamon-butter over it.
  8. Bake. Bake for 20-25 minutes until golden brown. Let cool for 10 minutes, then transfer to a cooling rack.
  9. Finish with vanilla icing. Mix powdered sugar, milk, and vanilla extract until smooth, then drizzle over warm focaccia and slice into squares to serve.

Notes

  • For best results, ensure water temperature is around 110℉ to activate yeast.
  • Using bread flour will give you a chewier texture compared to all-purpose flour.
  • Can adjust the milk in the icing for desired thickness.
