Delicious cookies combining the flavors of cinnamon rolls and cheesecake.

- 115g unsalted butter, softened
- 150g brown sugar
- 1 egg
- 1 tsp vanilla extract
- 180g all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 120g cream cheese (such as Philadelphia)
- 2 tbsp powdered sugar
- 1/2 tsp vanilla extract
- 2 tbsp butter, melted
- 50g brown sugar
- 1 tbsp ground cinnamon
Instructions
- In a bowl, beat together cream cheese, powdered sugar, and vanilla extract. Shape into 12 small balls and freeze for 20–30 minutes.
- Cream the softened butter and brown sugar together. Add the egg and vanilla extract, mixing until combined. Stir in the all-purpose flour, baking soda, and salt. Chill the dough for 20 minutes to make it easier to handle.
- In a small bowl, mix together brown sugar, ground cinnamon, and melted butter.
- Take a scoop of cookie dough and flatten it in your hand. Place a frozen cheesecake ball in the center and fold the dough around it, sealing it completely. Flatten the dough slightly, add a small amount of cinnamon topping to each cookie, and swirl with a toothpick to create a cinnamon roll-like design.
- Place the assembled cookies on a baking sheet and bake at 180°C (350°F) for 10–12 minutes, or until the edges turn golden. Let the cookies cool on the tray before transferring them to a wire rack.
Notes
- Ensure the cream cheese is at room temperature for easier mixing.
- The cookies can be stored in an airtight container for up to a week.
