- 1 medium zucchini, grated
- 1 cup all-purpose flour
- ½ cup unsweetened cocoa powder
- ½ cup granulated sugar
- ½ cup brown sugar
- ¾ cup semi-sweet chocolate chips
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp baking powder
- ½ tsp baking soda
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Grate the zucchini and set aside without squeezing out the moisture.
- In a bowl, beat together the egg, granulated sugar, brown sugar, and vanilla until smooth.
- In another bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture and fold in the grated zucchini and chocolate chips until just combined.
- Drop tablespoons of dough onto prepared baking sheets about 2 inches apart.
- Bake for 10-12 minutes until edges are firm but centers are soft. Let cool slightly before enjoying.
Notes
- Do not squeeze out the moisture from the zucchini for a softer cookie.
- Store cookies in an airtight container for up to a week.
