Description

Delicious and guilt-free chocolate cookies made with grated zucchini, perfect for satisfying your sweet tooth.


Ingredients

  • 1 medium zucchini, grated
  • 1 cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ¾ cup semi-sweet chocolate chips
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ½ tsp baking soda
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Grate the zucchini and set aside without squeezing out the moisture.
  3. In a bowl, beat together the egg, granulated sugar, brown sugar, and vanilla until smooth.
  4. In another bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture and fold in the grated zucchini and chocolate chips until just combined.
  6. Drop tablespoons of dough onto prepared baking sheets about 2 inches apart.
  7. Bake for 10-12 minutes until edges are firm but centers are soft. Let cool slightly before enjoying.

Notes

  • Do not squeeze out the moisture from the zucchini for a softer cookie.
