Delicious and easy-to-make chocolate macarons with a rich chocolate filling.
Ingredients

- 1 cup almond flour (112g)
- 1 cup icing sugar (120g)
- 2 tbsp cocoa powder (15g)
- 3 large egg whites (90g) at room temperature
- 1/4 cup granulated sugar (50g)
- 4 oz dark chocolate (113g), chopped
- 1/2 cup heavy cream (120ml)
Instructions
- Preheat oven to 300°F (150°C) and prepare two baking sheets with parchment paper.
- In a bowl, whisk together almond flour, icing sugar, and cocoa powder until combined. Sift to eliminate lumps.
- Whip egg whites in a clean bowl until foamy. Gradually add granulated sugar and whip until stiff peaks form.
- Gently fold the dry mixture into the meringue until fully combined.
- Transfer batter to a piping bag and pipe small circles on prepared sheets, about an inch apart.
- Tap sheets firmly to release air bubbles and let rest for 30 minutes.
- Bake for 15-20 minutes until feet form and shells are firm. Cool completely before removing from parchment.
- For the filling, heat dark chocolate with heavy cream until melted and smooth. Let cool slightly before spreading between two shells.
Notes
- Ensure your egg whites are at room temperature for the best results.
- Do not skip the resting time before baking to allow the macarons to form a skin.
- Feel free to experiment with different fillings such as buttercream or ganache.
