Description

Deliciously sweet and crunchy Chocolate Covered Cherry Rice Krispies Treats that combine marshmallows, cherries, and chocolate for a delightful treat.


Ingredients

  • 6 cups Rice Krispies cereal
  • 1/4 cup unsalted butter
  • 10 oz mini marshmallows
  • 1 tsp vanilla extract
  • 1 cup maraschino cherries, drained and chopped
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 tbsp coconut oil (optional, for smoother chocolate)

Instructions

  1. In a large pot over medium heat, melt the butter. Add the mini marshmallows and stir continuously until smooth. Stir in the vanilla extract.
  2. Remove the pot from heat and quickly stir in the Rice Krispies cereal and chopped maraschino cherries until fully combined.
  3. Grease a 9×13-inch baking dish or line it with parchment paper. Pour the mixture into the dish and gently press it down to create an even layer. Let cool completely.
  4. In a microwave-safe bowl, melt the semi-sweet chocolate chips and coconut oil (if using) in 30-second intervals, stirring in between, until smooth.
  5. Once the Rice Krispies treats are cooled, drizzle or dip them in the melted chocolate. Place on parchment paper and allow the chocolate to harden.
  6. Once set, slice into squares and enjoy!

Notes

  • For a more intense cherry flavor, use cherry-flavored extracts in addition to vanilla.
  • Store leftovers in an airtight container at room temperature.
