Description
Deliciously sweet and crunchy Chocolate Covered Cherry Rice Krispies Treats that combine marshmallows, cherries, and chocolate for a delightful treat.

- 6 cups Rice Krispies cereal
- 1/4 cup unsalted butter
- 10 oz mini marshmallows
- 1 tsp vanilla extract
- 1 cup maraschino cherries, drained and chopped
- 1 1/2 cups semi-sweet chocolate chips
- 1 tbsp coconut oil (optional, for smoother chocolate)
Instructions
- In a large pot over medium heat, melt the butter. Add the mini marshmallows and stir continuously until smooth. Stir in the vanilla extract.
- Remove the pot from heat and quickly stir in the Rice Krispies cereal and chopped maraschino cherries until fully combined.
- Grease a 9×13-inch baking dish or line it with parchment paper. Pour the mixture into the dish and gently press it down to create an even layer. Let cool completely.
- In a microwave-safe bowl, melt the semi-sweet chocolate chips and coconut oil (if using) in 30-second intervals, stirring in between, until smooth.
- Once the Rice Krispies treats are cooled, drizzle or dip them in the melted chocolate. Place on parchment paper and allow the chocolate to harden.
- Once set, slice into squares and enjoy!
Notes
- For a more intense cherry flavor, use cherry-flavored extracts in addition to vanilla.
- Store leftovers in an airtight container at room temperature.
- Variation: You can add nuts or replace cherries with your favorite dried fruits.
