- 1/3 cup melted coconut oil
- 1/2 cup coconut sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
- 3/4 cup all-purpose flour
- 1/3 cup semi-sweet chocolate chips
- 1/4 cup chopped pistachios
Instructions
- Combine melted coconut oil, coconut sugar, egg, and vanilla extract in a mixing bowl. Mix until well incorporated.
- Stir in the all-purpose flour until just blended. Fold in chocolate chips and chopped pistachios.
- Drop heaping spoonfuls of dough onto a baking tray lined with parchment paper. Bake at 350°F for 10 to 12 minutes, or until the edges are golden and centers set.
Notes
- Ensure the coconut oil is melted but not hot when mixing.
- For a chewier cookie, slightly underbake them.
