Description

Delicious Chocolate Chip Pistachio Cookies that are a perfect blend of rich chocolate and crunchy pistachios.


Ingredients

  • 1/3 cup melted coconut oil
  • 1/2 cup coconut sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 3/4 cup all-purpose flour
  • 1/3 cup semi-sweet chocolate chips
  • 1/4 cup chopped pistachios

Instructions

  1. Combine melted coconut oil, coconut sugar, egg, and vanilla extract in a mixing bowl. Mix until well incorporated.
  2. Stir in the all-purpose flour until just blended. Fold in chocolate chips and chopped pistachios.
  3. Drop heaping spoonfuls of dough onto a baking tray lined with parchment paper. Bake at 350°F for 10 to 12 minutes, or until the edges are golden and centers set.
