Description
A refreshing salad featuring chickpeas and peaches, enhanced with a honey lime dressing.

			- 1 (15-ounce) can chickpeas, rinsed and drained (425g)
 - 2 ripe peaches, pitted and diced
 - 1/2 cup red onion, thinly sliced (75g)
 - 1/2 cup cucumber, diced (75g)
 - 1/4 cup fresh mint leaves, chopped
 - 1/4 cup crumbled feta cheese (optional) (30g)
 - 3 tablespoons lime juice, freshly squeezed (45ml)
 - 2 tablespoons honey (30ml)
 - 2 tablespoons olive oil (30ml)
 - 1 teaspoon Dijon mustard
 - Salt and freshly ground black pepper to taste
 
Instructions
- In a small bowl or jar, whisk together the lime juice, honey, olive oil, and Dijon mustard. Season with salt and pepper to taste.
 - In a large mixing bowl, combine the rinsed and drained chickpeas, diced peaches, thinly sliced red onion, diced cucumber, and chopped fresh mint leaves. If using, add the crumbled feta cheese.
 - Pour the honey-lime dressing over the salad ingredients. Toss gently to ensure everything is evenly coated.
 - For the best flavor, chill the salad in the refrigerator for at least 15 minutes before serving.
 
Notes
- For a vegan option, omit the feta cheese.
 - This salad can be made a few hours in advance for better flavor.
