Description
A delicious chicken and pineapple sandwich melted with cheddar cheese and BBQ sauce.

			- 2 chicken breasts without skin or bones
 - 1 cup tangy BBQ sauce (split in half)
 - 8 slices of thick bread (like sourdough)
 - 2 cups grated sharp cheddar cheese
 - 12 thin pineapple strips (fresh or canned)
 - Butter for spreading
 - Cooking spray
 
Instructions
- Preheat the oven to 350°F (175°C). Place chicken breasts in a baking dish and cover with ½ cup of BBQ sauce. Bake for 20 minutes until cooked.
 - Shred the chicken and mix it with the remaining ½ cup of BBQ sauce.
 - Butter one side of each slice of bread and place them buttered side down. On four slices, add ¼ cup cheese, a quarter of the chicken mix, and 3 pineapple slices. Top with another ¼ cup cheese and place the remaining slices on top, buttered side up.
 - Heat a grill pan or skillet over medium heat and spray with nonstick spray. Cook two sandwiches for 3-4 minutes until golden brown, then flip and cook the other side for 1-2 minutes.
 - Repeat for the remaining sandwiches. Slice and serve hot.

- Ensure chicken is fully cooked before shredding.
 - You can use fresh or canned pineapple based on your preference.
