Ingredients
Scale
- 1 cup unsalted butter, softened
- 1 ½ cups granulated sugar
- 2 egg yolks
- 2 teaspoons pure vanilla extract
- 2 ½ cups all-purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon kosher salt
- ½ cup red hot candies, crushed
Instructions
- Preheat oven to 350°F (175°C). Line a cookie sheet with parchment paper and set aside.
- In a large mixing bowl, beat butter with sugar for 2-3 minutes until fully combined.
- Add egg yolks and vanilla extract, and mix until fluffy.
- Add flour, baking powder, and kosher salt. Beat until a crumbly mixture forms, then continue until a cookie dough ball forms.
- Stir in the crushed red hot candies.
- Using a 2-tablespoon cookie scoop, drop cookie dough onto the prepared baking sheet.
- Lightly press the tops of each cookie with a spatula to prevent doming and ensure even baking.
- Bake cookies for 13-15 minutes until edges are lightly browned.
- Remove from the oven and use the back of a spoon to push the melted red hot candies and mis-shaped cookies back into place while still warm.
- Cool cookies on the baking sheet for 5 minutes, then transfer to a parchment paper-lined wire cooling rack to cool completely.
Notes
- Make sure to crush the red hot candies into small pieces for better distribution.
- For a spicier kick, consider increasing the amount of crushed candies.
