Ingredients
- Unsalted butter: 1 cup, melted
- Granulated sugar: 1 1/2 cups
- Large eggs: 2
- Vanilla extract: 1 teaspoon
- All-purpose flour: 2 1/2 cups
- Cream of tartar: 1 1/2 teaspoons
- Baking soda: 1/4 teaspoon
- Salt: 1/2 teaspoon
- Ground cinnamon: 1 teaspoon
- For the topping:
- Granulated sugar: 1/4 cup
- Ground cinnamon: 1 tablespoon
Instructions
Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, allowing a bit of overhang for easy removal, and lightly grease the paper with butter or non-stick spray.
In a large mixing bowl, combine the melted butter and 1 1/2 cups of granulated sugar. Whisk until well incorporated and smooth.
Crack the eggs into the bowl, add the vanilla extract, and mix until the eggs are fully incorporated and the mixture is light in color.
In another bowl, sift together the all-purpose flour, cream of tartar, baking soda, salt, and 1 teaspoon of cinnamon. This blend of dry ingredients will give your bars that classic snickerdoodle flavor and texture.
Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix, as this can lead to dense bars.
Spread the batter evenly into the prepared pan. The dough will be thick, so use a spatula to smooth it out.
Mix 1/4 cup of granulated sugar with 1 tablespoon of cinnamon. Sprinkle this cinnamon-sugar mixture evenly over the top of the batter.
Place the pan in the oven and bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
Allow the bars to cool in the pan on a wire rack for at least 20 minutes. Use the overhanging parchment paper to lift the bars out of the pan and onto the rack to cool completely. Cut into squares or rectangles as desired.
