- 1/2 cup dried cherries, chopped
- 1/2 cup dried cranberries, chopped
- 1/3 cup raw almonds, finely chopped
- 2 tablespoons chia seeds
- 1 cup rolled oats (use certified gluten-free oats if required)
- 1/2 cup creamy almond butter
- 1/4 cup honey or pure maple syrup
- 1 teaspoon vanilla extract
- Pinch sea salt
Instructions
- In a large mixing bowl, add rolled oats, chopped dried cherries, chopped dried cranberries, finely chopped almonds, and chia seeds. Mix well to distribute evenly.
- In a small microwave-safe bowl, gently heat the almond butter and honey or maple syrup for 20 to 30 seconds until smooth and pourable. Stir in vanilla extract and a pinch of sea salt.
- Pour the warmed almond butter mixture over the dry ingredients. Combine thoroughly using a spatula or clean hands until the mixture is cohesive and sticky.
- If the mixture appears dry, add an additional tablespoon of almond butter. If it is too sticky, mix in a spoonful of oats until the desired consistency is achieved.
- Portion the mixture into tablespoon-sized scoops and roll into balls. Arrange on a baking tray lined with parchment paper.
- Refrigerate the bites for at least 30 minutes until firm.
- Store energy bites in an airtight container in the refrigerator for up to one week.
Notes
- For a nut-free version, substitute almond butter with sunflower seed butter.
- These energy bites can also be customized with different dried fruits or seeds.
