Description
Cheesy Pepperoni Pizza Roll-Ups are a delicious low-carb alternative to traditional pizza, perfect for a quick snack or meal.
Ingredients
Scale
- 4 low-carb flour tortillas
- ½ cup pizza sauce, plus extra for dipping
- 1 cup shredded mozzarella cheese
- 16 slices pepperoni
- ½ teaspoon Italian seasoning
- Olive oil cooking spray (optional for crispiness)
Instructions
- Preheat your oven to 375°F and line a baking sheet with parchment paper to prevent sticking.
- Place all four tortillas flat on your work surface, making sure they’re at room temperature so they roll easily without cracking.
- Spread about 2 tablespoons of pizza sauce evenly on each tortilla, leaving a small border around the edges for rolling.
- Sprinkle ¼ cup of mozzarella cheese over the sauce on each tortilla, then arrange 4 pepperoni slices on top of the cheese.
- Sprinkle each tortilla with a pinch of Italian seasoning, then roll each one up tightly from one end to the other.
- Place the rolled tortillas seam-side down on your prepared baking sheet. Lightly spray the tops with olive oil if you want them extra crispy.
- Bake for 10-12 minutes until the cheese is melted and bubbly, and the tortillas are golden around the edges.
- Let the roll-ups cool for 2-3 minutes, then slice each one into 3-4 pieces using a sharp knife. Serve with extra pizza sauce for dipping.
Notes
- For a spicier kick, you can add jalapeños or crushed red pepper flakes.
- These roll-ups can be made in advance and stored in the fridge for a quick meal later.
- Consider experimenting with other toppings like vegetables or different cheeses for variety.
