Ingredients
- 8 oz elbow macaroni

- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes (with green chilies if desired)
- 1 cup beef or vegetable broth
- 1 cup shredded sharp cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 tbsp chili powder
- 1 tsp cumin
- ½ tsp smoked paprika
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh cilantro (for garnish)
Instructions
- In a large pot of boiling salted water, cook the elbow macaroni according to the package directions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened (about 3-4 minutes).
- Increase the heat slightly and add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the chili powder, cumin, smoked paprika, salt, and pepper. Mix well, and cook for 1-2 minutes to toast the spices.
- Add the black beans, kidney beans, diced tomatoes, and broth to the skillet. Mix everything together, then reduce heat and simmer for about 10 minutes.
- Gently fold in the cooked elbow macaroni, stirring to combine every ingredient.
- Sprinkle both the sharp cheddar and Monterey Jack cheeses over the mixture. Stir until melted and creamy, about 2-3 minutes.
- Taste the chili mac and add more salt, pepper, or spices according to your preference.
