  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes (with green chilies if desired)
  • 1 cup beef or vegetable broth
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • ½ tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh cilantro (for garnish)

Instructions

  1. In a large pot of boiling salted water, cook the elbow macaroni according to the package directions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened (about 3-4 minutes).
  3. Increase the heat slightly and add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.
  4. Stir in the chili powder, cumin, smoked paprika, salt, and pepper. Mix well, and cook for 1-2 minutes to toast the spices.
  5. Add the black beans, kidney beans, diced tomatoes, and broth to the skillet. Mix everything together, then reduce heat and simmer for about 10 minutes.
  6. Gently fold in the cooked elbow macaroni, stirring to combine every ingredient.
  7. Sprinkle both the sharp cheddar and Monterey Jack cheeses over the mixture. Stir until melted and creamy, about 2-3 minutes.
  8. Taste the chili mac and add more salt, pepper, or spices according to your preference.
