Description

A delicious and hearty dish featuring chicken breasts stuffed with a cheesy broccoli filling.


Ingredients

  • 4 skinless and boneless chicken breasts (about 2 to 2 ¼ pounds total)
  • ½ tsp salt
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp ground black pepper
  • 1 ½ cups broccoli florets, chopped into tiny pieces (~½ inch), blanched, and dried
  • ¼ cup very small red bell pepper cubes
  • 1 ⅓ cups shredded colby-jack cheese
  • 1 ½ tbsp mayonnaise
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F.
  2. Cut a pocket along the side of each chicken breast with a sharp paring knife, being careful not to slice all the way through. Open the pocket slightly and set aside.
  3. In a small bowl, combine salt, smoked paprika, garlic powder, onion powder, and black pepper. Set aside.
  4. In a medium bowl, toss together the broccoli, diced red bell pepper, colby-jack cheese, and mayonnaise. Add 1 teaspoon of the seasoning mix and stir gently.
  5. Stuff each chicken breast pocket with a quarter of the broccoli and cheese mixture. Use toothpicks to secure the openings.
  6. Sprinkle the remaining seasoning mix over both sides of the stuffed chicken breasts.
  7. In a large oven-safe skillet, heat olive oil over medium heat and brown 2 stuffed chicken breasts at a time for 3-4 minutes on each side until golden. Remove and repeat with the remaining chicken.
  8. Return all the browned chicken breasts to the skillet, cover with foil, and bake for 18–20 minutes until the internal temperature reaches 165°F.
  9. Let the chicken sit for 5 minutes after baking. Remove toothpicks carefully before serving.
