- 1 cup orzo pasta
- 1 pound ground beef (or turkey)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 teaspoon Worcestershire sauce
- 1 cup beef broth
- 1/2 cup shredded cheddar cheese
- 1/4 cup pickles, chopped
- 2 tablespoons ketchup
- 1 tablespoon mustard
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, bring salted water to a boil. Add the orzo pasta and cook according to package instructions until al dente. Drain and set aside.
- In the same pot, heat a splash of oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened.
- Add the minced garlic to the onions and cook for an additional minute until fragrant.
- Introduce the ground beef to the pot, breaking it up with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the tomato paste, Worcestershire sauce, and beef broth, mixing well to combine. Bring to a simmer.
- Add the cooked orzo pasta to the pot, followed by the shredded cheddar cheese, chopped pickles, ketchup, and mustard. Stir until the cheese has melted and everything is well combined.
- Season with salt and pepper to taste. Adjust any flavors as needed.
- Remove from heat and let sit for a couple of minutes to allow flavors to meld.
- Serve warm, garnished with fresh parsley on top.
