Description
Cheddar Bay Biscuit Pie is a delicious seafood delight featuring a blend of langostino, shrimp, crab, and bell peppers, all enveloped in a creamy gravy and topped with cheesy biscuit layers.

			- 12 oz of langostino or lobster meat
 - 1/2 cup chopped bell peppers
 - 1 lb peeled and deveined shrimp
 - 1 cup diced onions
 - 8 oz cooked jumbo lump crab
 - 1/4 cup finely diced celery
 - Olive oil for sautéing
 - 1 tsp of salt (plus extra if needed)
 - 1 tsp of pepper (plus extra if needed)
 - 4 tbsp of butter
 - 1/2 tsp of smoked paprika
 - 1 tsp of dried tarragon
 - 1 tbsp garlic, minced or paste
 - 1 cup heavy cream
 - 1 tsp thyme
 - 5 tbsp all-purpose flour
 - 1 tsp each of salt and pepper
 - 2 cups chicken stock
 - 3/4 cup of milk
 - 1 box Cheddar Bay Biscuit mix (11.36 oz)
 - 1/2 cup shredded mild cheddar cheese
 - 1 pouch garlic herb mix from biscuit box
 - 1/4 cup melted butter
 
Instructions
- In a heated pan with olive oil, stir-fry shrimp and langostino for a couple of minutes with some salt and pepper, then take them out.
 - Toss in the onions, celery, and bell peppers next, cooking until the onions look soft and clear (about 4-5 minutes).
 - Lower the stove to medium-low. Pop the butter in and let it melt before stirring in the flour to coat the veggies.
 - Pour in the chicken broth to loosen everything up and simmer gently.
 - Stir in the cream, plus garlic, thyme, tarragon, salt, pepper, and paprika. Finally, mix in the shrimp, langostino, and crab carefully and take off the heat.
 - Stir together the pouch seasoning and melted butter in a small bowl. Set the mixture aside.
 - Put the biscuit mix in a bowl with the shredded cheese and milk. Stir with a fork until the mixture looks rough and clumpy, but don’t overdo it.
 - Set your oven to 425°F.
 - Put the seafood and veggie mix into a baking dish or split it among 6 ramekins. Drop spoonfuls of the biscuit dough on top.
 - Pop everything on a tray and bake until the biscuits turn golden and are fully cooked—around 14-16 minutes.
 - Right after you take the dish out of the oven, brush the biscuit tops with the herb butter. Serve while warm.
 
Notes
- Adjust the seasoning to taste.
 - Serve fresh out of the oven for the best texture.
 - Can be made in ramekins for individual servings.
