 - 1 teaspoon baking powder

 - 1 teaspoon ground cinnamon
 - 1/2 teaspoon nutmeg
 - 2 large eggs
 - 1/2 cup vegetable oil
 - 1/2 cup unsweetened applesauce
 - 1 teaspoon vanilla extract
 - 1 (14 oz) can sweetened condensed milk
 
Instructions
- Preheat the oven to 350°F (175°C) and prepare a 9×13-inch baking pan.
 - Mix the dry ingredients in a large bowl.
 - Combine the wet ingredients in another bowl.
 - Incorporate the wet mixture into the dry ingredients and fold in the grated carrots and nuts.
 - Pour the batter into the prepared baking pan and bake for 30–35 minutes.
 - Prepare the sweetened condensed milk filling.
 - Poke holes in the cooled cake and pour the sweetened condensed milk over it.
 - Frost the cake with cream cheese frosting and add toppings if desired.
