Ingredients

  • 1 1/2 cups all-purpose flour

  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 (14 oz) can sweetened condensed milk

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9×13-inch baking pan.
  2. Mix the dry ingredients in a large bowl.
  3. Combine the wet ingredients in another bowl.
  4. Incorporate the wet mixture into the dry ingredients and fold in the grated carrots and nuts.
  5. Pour the batter into the prepared baking pan and bake for 30–35 minutes.
  6. Prepare the sweetened condensed milk filling.
  7. Poke holes in the cooled cake and pour the sweetened condensed milk over it.
  8. Frost the cake with cream cheese frosting and add toppings if desired.
