Description

Carrot Date Coconut Truffles are a delicious and healthy sweet treat made with natural ingredients.


Ingredients

Scale
  • 200 ml water
  • 190 g soft dates, pitted (approx. 12 large or 1618 smaller, softened in hot water if needed)
  • 1 medium carrot, grated (approx. 85 g)
  • 70 g desiccated coconut
  • 90 g walnuts
  • 1 tablespoon honey
  • 1 teaspoon ground cinnamon
  • 120 g white chocolate, melted
  • 1 tablespoon liquid oil or coconut oil

Instructions

  1. If dates are firm, soak them in hot water for 5 minutes and drain. Peel and finely grate the carrot.
  2. Place dates, grated carrot, desiccated coconut, walnuts, honey, and cinnamon into a food processor. Pulse until the mixture resembles fine, sandy crumbs and begins to clump together.
  3. Remove mixture from processor and knead lightly by hand to bring together. Divide into 18 equal portions and roll each portion into a compact ball.
  4. Arrange truffles on a tray and refrigerate for 20–25 minutes until firm.
  5. Melt white chocolate with 1 tablespoon liquid oil or coconut oil until smooth and glossy.
  6. Dip each chilled truffle into the melted white chocolate, allowing excess to drip off. Place coated truffles on a parchment-lined tray.
  7. Chill coated truffles in the refrigerator until chocolate is fully set. Serve cold.

Notes

  • You can substitute the walnuts with any nuts of your choice.
  • For a vegan version, use vegan chocolate instead of white chocolate.
