Instructions

  1. In a medium skillet over medium heat, melt the unsalted butter.
  2. Add the brown sugar, vanilla extract, and cinnamon. Stir until the mixture begins to bubble and thicken slightly, about 2-3 minutes.
  3. Carefully add the sliced peaches to the skillet, stirring gently to coat them in the caramel mixture. Cook for an additional 2-3 minutes until the peaches are softened. Remove from heat and set aside.
  4. In a large mixing bowl, combine the flour, granulated sugar, baking powder, and salt. Whisk together to ensure there are no lumps.
  5. In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until well combined.
  6. Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix; some lumps are okay.
  7. Preheat a non-stick skillet or griddle over medium heat. Lightly grease with a bit of butter or cooking spray.
  8. Pour a ladleful of pancake batter into the skillet, forming a round pancake. Allow it to cook for about 2 minutes, or until bubbles form on the surface.
  9. Carefully spoon a portion of the caramel peach mixture on top of the batter, allowing it to sink slightly into the pancake.
  10. Once the edges start to look firm and the bottom is golden brown, carefully flip the pancake and cook for an additional 2 minutes on the other side until golden brown and cooked through.
  11. Repeat the process with the remaining batter and topping.
