			- 1 package (3.4 oz) instant vanilla pudding mix
 - 1 cup cold milk
 - 1 container (8 oz) whipped topping (Cool Whip), thawed
 - 1 can (20 oz) crushed pineapple, drained
 - 2 medium apples, chopped (Granny Smith or Honeycrisp)
 - 1 cup mini marshmallows
 - ½ cup caramel sauce, plus extra for drizzling
 - ½ cup chopped pecans or walnuts (optional)
 - 1 tsp lemon juice
 
Instructions
- Chop the apples into bite-sized pieces and toss with lemon juice.
 - If making homemade caramel, melt sugar in a saucepan and add butter and cream, whisking until smooth.
 - In a separate bowl, whisk together the pudding mix and cold milk until thickened.
 - Fold in the whipped topping until smooth.
 - Stir in the crushed pineapple, prepared apples, mini marshmallows, and caramel sauce.
 - Cover and refrigerate for at least 1 hour.
 - Before serving, drizzle with extra caramel sauce and sprinkle with nuts or marshmallows.
