Ingredients

  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 cup cold milk
  • 1 container (8 oz) whipped topping (Cool Whip), thawed
  • 1 can (20 oz) crushed pineapple, drained
  • 2 medium apples, chopped (Granny Smith or Honeycrisp)
  • 1 cup mini marshmallows
  • ½ cup caramel sauce, plus extra for drizzling
  • ½ cup chopped pecans or walnuts (optional)
  • 1 tsp lemon juice

Instructions

  1. Chop the apples into bite-sized pieces and toss with lemon juice.
  2. If making homemade caramel, melt sugar in a saucepan and add butter and cream, whisking until smooth.
  3. In a separate bowl, whisk together the pudding mix and cold milk until thickened.
  4. Fold in the whipped topping until smooth.
  5. Stir in the crushed pineapple, prepared apples, mini marshmallows, and caramel sauce.
  6. Cover and refrigerate for at least 1 hour.
  7. Before serving, drizzle with extra caramel sauce and sprinkle with nuts or marshmallows.
