Description

A delicious and fresh toast topped with cottage cheese, bursting cherry tomatoes, and fresh basil for a delightful flavor.


Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 2 cups cherry tomatoes
  • 2 garlic cloves, minced
  • 1 teaspoon sugar
  • Kosher salt
  • Freshly ground black pepper
  • 2 slices sourdough bread, toasted
  • 1 cup cottage cheese, divided
  • ¼ cup chopped fresh basil
  • 2 tablespoons balsamic glaze
  • 1 tablespoon hot honey

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the tomatoes, garlic, sugar, and a pinch of salt and pepper. Cook, shaking the pan and stirring often, until the tomatoes burst and form a sauce-like consistency, about 10 to 12 minutes. Turn off the heat.
  3. Spread ½ cup of cottage cheese onto each slice of toasted sourdough bread. Season with a sprinkle of salt and pepper.
  4. Top with the prepared tomato mixture, followed by fresh basil.
  5. Drizzle with balsamic glaze and hot honey.
  6. Serve immediately.
