Ingredients
- 2 salmon fillets
- 12 large shrimp, peeled and deveined
- 1 tablespoon Cajun seasoning
- 1 tablespoon olive oil
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- 4 cups mashed potatoes (prepared or homemade)
- 2 cups green beans, trimmed
- 1 tablespoon lemon juice
- Fresh parsley for garnish
Instructions
- Pat the salmon and shrimp dry with paper towels. Season both with Cajun seasoning.
- Heat olive oil in a skillet over medium-high heat. Add salmon fillets and sear for 4–5 minutes per side or until cooked through. Remove and set aside.
- Add shrimp to the same pan, cook for 2–3 minutes per side until pink and cooked through. Remove and set aside.
- In the same skillet, lower the heat to medium and add butter. Once melted, sauté garlic until fragrant, about 1 minute.
- Pour in heavy cream and bring to a gentle simmer. Add Parmesan cheese, salt, and pepper. Stir until the sauce thickens.
- While the sauce is simmering, steam or boil green beans for 4–5 minutes until tender-crisp. Season with lemon juice and a pinch of salt.
- To serve, layer a generous scoop of mashed potatoes on each plate. Top with salmon and shrimp. Spoon over garlic cream sauce and serve with green beans on the side. Garnish with fresh parsley.
