Description

This Cajun Corn on the Cob is the ultimate side dish with a Southern kick! Sweet, juicy corn is slathered in a zesty Cajun butter and grilled (or roasted) to smoky perfection. Perfect for BBQs, cookouts, or when you want to spice up your meal!


Ingredients

  • 4 ears of corn, husked
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 4 tablespoons mayonnaise (vegan mayo recommended)
  • ⅓ cup sour cream or Mexican crema
  • 1 ½ teaspoons Cajun spice
  • 1 ½ teaspoons smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 tablespoon chopped cilantro
  • ½ cup feta or cotija cheese, crumbled
  • 1 tablespoon lime juice
  • 1 teaspoon chipotle or chili powder (optional)

Instructions

  1. Whisk together olive oil, half of the Cajun spice, half of the smoked paprika, garlic powder, onion powder, salt, and pepper in a small bowl.
  2. Place each corn cob on a piece of foil and brush generously with the olive oil mixture. Wrap the corn in foil.
  3. Bake in a preheated oven at 425°F (220°C) for 30 minutes. If you prefer softer corn, brush with more oil-spice mixture and bake for an additional 20-25 minutes until tender.
  4. While the corn is baking, prepare the mayo sauce by mixing mayonnaise, sour cream, remaining Cajun spice, smoked paprika, lime juice, salt, and pepper in a small bowl.
  5. Once the corn is cooked, let it cool slightly before brushing with the mayo mixture. Optionally, brush with any leftover oil mixture.
  6. If desired, for a charred flavor, transfer the corn to a lightly greased grill pan and grill until charred on all sides, being careful not to overcook.
  7. Before serving, sprinkle with parsley, crumbled cheese, and extra Cajun seasoning. Serve warm!

Notes

  • For a spicier kick, add more chipotle or chili powder.
  • Use additional lime juice for a zestier flavor if desired.
  • This recipe can be easily scaled for larger gatherings.
