Description

A quick and tasty meal featuring diced chicken sautéed with bell peppers and onions, seasoned with Cajun spices, and served over rice.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts, diced
  • 1 medium bell pepper, sliced
  • 1/2 medium onion, sliced
  • 2 teaspoons Cajun seasoning blend
  • 1 tablespoon olive oil
  • 2 cups cooked rice
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add the diced chicken and sprinkle with Cajun seasoning. Sauté for 5–7 minutes, turning occasionally, until chicken is evenly seared and cooked through.
  2. Add the sliced bell pepper and onion to the skillet. Continue to stir-fry for 3–4 minutes until vegetables are tender-crisp.
  3. Divide cooked rice among plates. Spoon the chicken and vegetable mixture over rice, then garnish with fresh parsley before serving.

Notes

  • Adjust the level of Cajun seasoning according to your taste preference.
  • This dish pairs well with a squeeze of lemon juice for added freshness.
