Instructions
- Heat olive oil in a large skillet over medium-high heat. Add the diced chicken and sprinkle with Cajun seasoning. Sauté for 5–7 minutes, turning occasionally, until chicken is evenly seared and cooked through.
- Add the sliced bell pepper and onion to the skillet. Continue to stir-fry for 3–4 minutes until vegetables are tender-crisp.
- Divide cooked rice among plates. Spoon the chicken and vegetable mixture over rice, then garnish with fresh parsley before serving.
