Description

Cajun Black Bean Chicken Burritos are a delicious and hearty meal combining seasoned chicken with a flavorful black bean filling, topped with fresh ingredients and wrapped in a soft tortilla.


Ingredients

  • 2 boneless, skinless chicken breasts (about 14 ounces), cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 small red onion, finely chopped
  • 1 clove garlic, minced
  • 1/2 red bell pepper, diced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • 4 large flour tortillas
  • 3.5 ounces shredded cheddar or Monterey Jack cheese
  • 1 large ripe avocado, sliced
  • 3.5 ounces shredded lettuce
  • 2 medium tomatoes, diced
  • 4 tablespoons sour cream
  • Fresh cilantro, chopped (optional)
  • Lime wedges, for serving

Instructions

  1. Combine the chicken pieces, olive oil, Cajun seasoning, smoked paprika, garlic powder, onion powder, salt, and black pepper in a bowl. Mix thoroughly and allow to marinate for at least 10 minutes.
  2. Heat a large skillet over medium-high heat. Add the marinated chicken and cook for 5 to 7 minutes until browned and cooked through. Transfer to a plate and set aside.
  3. In the same skillet, add 1 tablespoon olive oil. Sauté red onion and minced garlic for 2 minutes until aromatic. Add diced red bell pepper, ground cumin, and chili powder, cooking for 3 to 4 minutes until the vegetables are tender.
  4. Combine the black beans with the sautéed vegetables, season with salt and black pepper, and cook for an additional 2 to 3 minutes until thoroughly heated. Remove from heat.
  5. Heat tortillas one at a time in a dry skillet or microwave them briefly until soft and pliable.
  6. For each burrito, layer a quarter of the black bean mixture, cooked Cajun chicken, shredded cheese, avocado slices, shredded lettuce, diced tomatoes, and a spoonful of sour cream onto a tortilla. Garnish with fresh cilantro if desired.
  7. Fold the sides of each tortilla inward and roll up tightly. Slice in half if preferred. Serve immediately with lime wedges.

Notes

  • Feel free to adjust the spice level by adding more or less Cajun seasoning.
  • This recipe can easily be made vegetarian by omitting the chicken.
  • Leftover burritos can be wrapped and stored in the fridge for up to 3 days.
