  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 2 large eggs
  • 3/4 cup buttermilk
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Vegetable oil for frying

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and nutmeg.
  2. In a separate bowl, beat the eggs, then stir in the buttermilk, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Heat vegetable oil in a deep fryer or heavy-bottomed pot to 375°F (190°C).
  5. Drop spoonfuls of batter into the hot oil, frying 2-3 donuts at a time. Fry for about 2 minutes per side or until golden brown.
