Description

Bruschetta Chicken is a delectable dish that combines grilled chicken breasts topped with fresh tomato, basil, and garlic mixture, finished with a drizzle of balsamic glaze.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil (plus more for bruschetta)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 4 Roma tomatoes, diced
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1 tablespoon balsamic glaze (or more to taste)

Instructions

  1. Preheat grill or skillet to medium-high heat.
  2. Pat chicken breasts dry and rub with olive oil. Season both sides with salt, pepper, and Italian seasoning.
  3. Grill or sear chicken for 5–7 minutes per side, or until internal temperature reaches 165°F. Let rest.
  4. While chicken cooks, mix diced tomatoes, garlic, chopped basil, a drizzle of olive oil, and a pinch of salt and pepper in a bowl.
  5. Once chicken is rested, spoon tomato mixture over each piece.
  6. Drizzle balsamic glaze on top and garnish with extra basil if desired.
  7. Serve immediately.

Notes

  • For extra flavor, marinate the chicken for 30 minutes before cooking.
  • Can substitute with grilled vegetables for a vegetarian option.
