Description
If you love chewy brownies and soft cookies, then these Brownie Mix Cookies are the perfect treat! With just a few simple ingredients, you can turn a box of brownie mix into thick, fudgy cookies that taste like a cross between a brownie and a cookie.
Ingredients
Scale
- 1 box (18-20 oz) brownie mix
- 2 large eggs
- ⅓ cup vegetable oil (or melted butter for a richer taste)
- 2 tablespoons all-purpose flour
- 1 teaspoon vanilla extract (optional, but adds great flavor)
- ½ cup chocolate chips or chunks (optional, for extra chocolatey goodness)
Instructions
Step 1: Preheat the Oven
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper or lightly grease it.
Step 2: Make the Dough
- In a large mixing bowl, combine the brownie mix, eggs, oil, flour, and vanilla extract.
- Stir until the dough comes together—it will be thicker than brownie batter but softer than traditional cookie dough.
- Gently fold in the chocolate chips (if using).
Step 3: Scoop & Shape the Cookies
- Use a cookie scoop or spoon to drop tablespoon-sized dough balls onto the prepared baking sheet.
- Space them 2 inches apart, as they will spread slightly.
Step 4: Bake the Cookies
- Bake for 9-12 minutes, or until the edges are set but the centers are slightly soft.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- For extra fudgy cookies, slightly underbake them and let them firm up as they cool.
- For crispier edges, bake for an extra 1-2 minutes.
- Chill the dough for 20 minutes before baking if you want thicker cookies.
