Description

Decadent brownie cookie dough sandwich cookies that combine rich brownie cookies with a sweet cookie dough filling for a delightful treat.


Ingredients

  • 1 cup all-purpose flour
  • 2 cups granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 3 large eggs

  • 1/2 cup chocolate chips (optional)
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, whisk together cocoa powder, flour, baking powder, and salt. In another bowl, beat the melted butter, eggs, vanilla, and sugar until well combined.
  3. Gradually mix the dry ingredients into the wet ingredients. Stir in chocolate chips if desired.
  4. Using a cookie scoop or tablespoon, drop rounded spoonfuls of brownie batter onto the prepared baking sheets, spacing them about 2 inches apart.
  5. Bake in the preheated oven for 15-20 minutes, or until the edges are set but the centers are still slightly soft. Allow them to cool on the baking sheets for 10 minutes before transferring to wire racks to cool completely.
  6. In a separate bowl, cream the softened butter with both sugars until fluffy. Mix in vanilla extract. Gradually add flour and salt, mixing until fully incorporated. Stir in chocolate chips.
  7. Once brownies are completely cool, take one brownie cookie and spread a generous layer of cookie dough filling on the flat side. Top with another brownie cookie to form a sandwich.
  8. Continue assembling until all brownie cookies are filled.
  9. For a firmer filling, refrigerate the assembled sandwich cookies for about 30 minutes.
  10. These decadent cookies are ready to be enjoyed!
