Description

A delightful and moist cake infused with sweet peaches and topped with a rich brown sugar frosting, perfect for summer gatherings.


Ingredients

  • 425 g yellow cake mix
  • 3 large eggs
  • 80 ml vegetable oil
  • 120 ml peach nectar or peach juice
  • 450 g peeled and chopped peaches
  • 1 drop orange food coloring (optional)
  • 115 g unsalted butter, cut into pieces
  • 120 ml heavy cream
  • 200 g packed brown sugar
  • 1 tsp vanilla extract
  • 310 g confectioner’s sugar, sifted

Instructions

  1. Preheat the oven to 175°C. Lightly grease a 23×33 cm pan with nonstick spray.
  2. In a large bowl, combine the cake mix, eggs, vegetable oil, peach nectar, and food coloring if using. Blend until smooth and well incorporated.
  3. Fold the chopped peaches into the batter using a spatula until distributed evenly.
  4. Transfer the batter to the prepared pan. Bake for approximately 28 minutes, or until a toothpick inserted in the center emerges with a few moist crumbs but no wet batter.
  5. Set a saucepan over medium heat. Add the butter, heavy cream, and brown sugar. Bring to a boil, stirring constantly until all ingredients are dissolved.
  6. Remove saucepan from the heat. Add vanilla extract and sifted confectioner’s sugar. Whisk vigorously until the mixture is smooth and free of lumps. Return briefly to low heat if the mixture stiffens before smooth.
  7. Immediately pour the frosting over the warm cake, spreading evenly in one pass for a smooth finish. The frosting will set quickly.
  8. Allow the frosting to harden fully at room temperature or refrigerate before cutting into servings.
