Description
A delicious breakfast bagel sandwich filled with crispy bacon, cheesy scrambled eggs, and optional mayo or cream cheese.

- 1 whole bagel
- 2 slices bacon
- 1 slice cheese (American, Colby, or Swiss)
- 1 tbsp mayonnaise or cream cheese (optional)
- 2 large eggs
- 1 tbsp whole milk
- 3 tsp chopped green onion (optional)
- ¼ tsp salt
- ⅛ tsp ground black pepper
- Oil or butter for cooking
Instructions
- Heat a skillet over medium-high heat and add the bacon slices. Cook for 4 minutes, then flip and cook another 4-5 minutes until they reach your perfect level of crispiness. Transfer to a paper towel-lined plate and cover with foil to keep warm.
- In a bowl, whisk together the eggs, milk, salt, pepper, and green onions if using.
- Spray a medium skillet with cooking spray and heat over medium heat. Pour in the egg mixture and cover with a lid for 1 minute.
- Using a large spatula, carefully flip the entire egg mixture like a pancake. Gently fold the cooked egg into a square shape that fits nicely on your bagel.
- Place the cheese slice on top of the warm eggs, turn off the heat, and cover with the lid to let the cheese melt.
- Slice your bagel in half and toast until golden brown. Spread with mayo or cream cheese if using.
- Place the crispy bacon on the bottom half of the toasted bagel, then add the cheesy scrambled eggs on top. Crown with the top half of the bagel.
- Serve immediately while everything is warm and the cheese is still melty.
