For the Bourbon Peach Glaze:
- 2 ripe peaches, diced (or ½ cup peach preserves)
- ¼ cup bourbon
- 2 tbsp honey (or maple syrup)
- 1 tbsp Dijon mustard
- 2 tbsp soy sauce (or coconut aminos)
- 2 cloves garlic, minced
- ½ tsp smoked paprika
- ¼ tsp red pepper flakes (optional, for heat)
- 1 tbsp butter (for richness)
For Garnish:
- Fresh chopped parsley or basil
- Peach slices for serving (optional)
Instructions
Step 1: Preheat & Prep
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper or lightly grease an oven-safe skillet.
- Pat the salmon fillets dry, then rub them with olive oil, salt, and pepper.
Step 2: Make the Bourbon Peach Glaze
- In a small saucepan, heat diced peaches, bourbon, honey, Dijon mustard, soy sauce, garlic, smoked paprika, and red pepper flakes over medium heat.
- Simmer for 5-7 minutes, stirring occasionally, until the peaches soften and the sauce thickens slightly.
- Stir in butter for a silky finish, then remove from heat.
- For a smoother glaze, blend the mixture or mash the peaches with a fork.
Step 3: Roast the Salmon
- Place the salmon fillets on the baking sheet, skin-side down.
- Brush generously with half of the bourbon peach glaze.
- Roast in the oven for 12-15 minutes, or until the salmon flakes easily with a fork.
Step 4: Broil for Extra Caramelization (Optional)
- Turn the oven to broil and cook for 2-3 more minutes to caramelize the glaze.
- Keep a close eye to prevent burning!
Step 5: Serve & Enjoy
- Drizzle the salmon with the remaining bourbon peach glaze.
- Garnish with fresh herbs and extra peach slices.

- Pat the salmon dry before seasoning to help the glaze stick better.
- Use fresh peaches if possible for the best flavor, but peach preserves work in a pinch.
