- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated cheddar cheese
- 1 egg
- 1/4 cup bourbon BBQ sauce (plus extra for drizzling)
- 6 slices cooked bacon, crumbled
- 4 sub rolls
- Salt and pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- In a large bowl, combine ground beef, breadcrumbs, cheddar cheese, egg, 1/4 cup bourbon BBQ sauce, and a pinch of salt and pepper. Mix just until combined—don’t overwork the meat.
- Roll mixture into meatballs (about 1½-inch size) and place on the prepared baking sheet.
- Bake for 18–20 minutes, or until meatballs are cooked through and slightly browned.
- While meatballs cook, warm the sub rolls and drizzle a little extra BBQ sauce inside each.
- Stuff each roll with 3–4 meatballs, sprinkle crumbled bacon on top, and add an extra drizzle of BBQ sauce if desired.
- Optional: Pop the assembled subs under the broiler for 2–3 minutes to get the rolls toasty and the cheese bubbling.
- Serve hot and devour!
