For the Cupcakes

  • Ingredients:
    • 1 box yellow cake mix (or your favorite vanilla cupcake recipe)
    • Ingredients as per box instructions (typically eggs, oil, and water)

For the Filling

  • Ingredients:
    • 1 package (3.4 oz) instant vanilla pudding mix
    • 1 ½ cups cold milk

For the Ganache Topping

  • Ingredients:
    • 1 cup semi-sweet chocolate chips
    • ½ cup heavy cream

Instructions

  • Prepare the Cupcakes:

    • Preheat your oven as directed on the cake mix box.
    • Prepare the cupcake batter following the instructions on the box.
    • Fill cupcake liners about 2/3 full with the batter.
    • Bake as directed on the package, then allow the cupcakes to cool completely.
  • Make the Filling:

    • In a bowl, whisk together the instant vanilla pudding mix and cold milk until smooth and thickened.
    • Once the cupcakes have cooled, use a small knife or cupcake corer to remove a small portion from the center of each cupcake.
    • Fill each cupcake cavity with a spoon or piping bag loaded with the prepared pudding.
  • Prepare the Ganache Topping:

    • In a small saucepan, heat the heavy cream over medium heat until it begins to simmer (do not boil).
    • Remove from heat and pour over the semi-sweet chocolate chips in a bowl.
    • Let sit for 2-3 minutes, then stir until the mixture is smooth and glossy.

 

  • Assemble the Cupcakes:

    • Spoon or drizzle the chocolate ganache over the filled cupcakes.
    • Allow the ganache to set slightly before serving.
