Description

A delicious and hearty casserole made with pancakes, sausage, and blueberries, perfect for breakfast or brunch.


Ingredients

  • 4 cups pancake mix
  • 1½ cups fresh blueberries
  • 3 cups water
  • 1 lb breakfast sausage, cooked and drained (preferably turkey breakfast sausage)
  • ⅓ cup maple syrup

Instructions

  1. Brown the turkey breakfast sausage in a skillet, breaking it into small pieces. Drain thoroughly and set aside.
  2. In a large mixing bowl, prepare the pancake batter by combining the pancake mix and water according to the package instructions.
  3. Fold the cooked sausage, blueberries, and maple syrup into the batter. (If you like, set aside a small handful of sausage and blueberries to sprinkle on top.)
  4. Grease a 9×13-inch baking dish with cooking spray, then pour the mixture evenly into the pan.
  5. Add the reserved sausage and blueberries over the surface.
  6. Bake at 375°F for 40–45 minutes, or until the center tests clean with a toothpick.
  7. Slice, drizzle with extra maple syrup if desired, and serve warm.

Notes

  • For a sweeter flavor, you can add more maple syrup.
