Description

As summer rolls in, I find myself craving light, refreshing meals that burst with flavor. That’s where my Blueberry Peach Feta Salad comes in! This delightful dish is not just a feast for the eyes; it’s a quick solution for busy days when you want something healthy yet satisfying.

Ingredients

Scale
  • 2 ripe peaches, sliced
  • 1 cup fresh blueberries
  • 4 cups mixed greens (spinach, arugula, or butter lettuce)
  • 1/3 cup crumbled feta cheese
  • 1/4 cup toasted almonds or pecans (for crunch)
  • 1/4 cup thinly sliced red onion (optional, for a bit of bite)
  • Fresh basil or mint leaves for garnish (optional)
  • 3 tablespoons olive oil
  • 1 tablespoon honey (or maple syrup)
  • 1 tablespoon fresh lemon juice (or balsamic vinegar)
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the Dressing – In a small bowl or jar, whisk together olive oil, honey, lemon juice, Dijon mustard, salt, and pepper until smooth. Set aside.
  2. Toast the Nuts – In a dry skillet over medium heat, toast the almonds or pecans for 2-3 minutes, stirring frequently until golden and fragrant. Let them cool.
  3. Assemble the Salad – In a large bowl, layer mixed greens, sliced peaches, blueberries, crumbled feta, and red onion.
  4. Drizzle & Toss – Pour the dressing over the salad and gently toss to coat.
  5. Garnish & Serve – Top with toasted nuts and fresh basil/mint for an extra burst of flavor. Serve immediately!

Notes

  • Feel free to substitute the nuts based on your preference.
  • This salad is best served fresh but can be stored in the refrigerator for a few hours before serving.
