Description

Ingredients

  • 1 teaspoon lemon juice (optional)
  • Fresh blueberries (for garnish, optional)
  • Granola or shredded coconut (for garnish, optional)

Instructions

  1. In a small saucepan, combine the blueberries and maple syrup. Cook over medium heat, stirring occasionally, for 5-7 minutes, until the blueberries soften and release their juice.
  2. If desired, mash the blueberries with a fork or blend them to your desired consistency for a smoother sauce.
  3. For added tartness, stir in a teaspoon of lemon juice, if desired. Remove from heat and let it cool.
  4. In a medium-sized bowl, whisk together the almond milk, maple syrup, vanilla extract, and a pinch of salt until well combined.
  5. Stir in the chia seeds, ensuring they are evenly distributed throughout the liquid.
  6. Cover the bowl and refrigerate for at least 4 hours or overnight to allow the chia seeds to absorb the liquid and form a thick pudding.
  7. Once the chia pudding has set, stir it well and spoon it into serving glasses or bowls.
  8. Top each serving with a spoonful of blueberry sauce and garnish with fresh blueberries, granola, or shredded coconut for added texture and flavor.
