Description

A delicious Cajun-inspired blackened salmon sandwich that combines tender salmon fillets with fresh vegetables and a creamy dressing, all nestled in a soft bun.


Ingredients

  • 4 skinless salmon fillets, 85–115 g each
  • 2 teaspoons olive oil
  • 22.5 tablespoons Cajun seasoning
  • 2 teaspoons high heat oil (avocado, coconut, or ghee)
  • 4 soft sandwich buns (sourdough or brioche recommended)
  • 60 ml Dilly Ranch or creamy herby hemp dressing, or store-bought ranch
  • 80 g mixed greens (lettuce, spinach, and sprouts)
  • 1 small red onion, thinly sliced
  • 0.5 cucumber, thinly sliced
  • 2 teaspoons smoked paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon fine sea salt
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon cayenne pepper, to taste

Instructions

  1. Allow salmon fillets to rest at room temperature for 20 minutes to promote even cooking.
  2. Combine smoked paprika, garlic powder, onion powder, salt, oregano, thyme, black pepper, and cayenne in a bowl. Mix thoroughly.
  3. Prepare dilly ranch or creamy herby hemp dressing, or use a high-quality store-bought ranch.
  4. Pat salmon fillets dry and lightly brush with olive oil. Generously coat each piece with approximately 2 teaspoons Cajun seasoning, gently pressing spices into the surface.
  5. Heat a cast iron or carbon steel pan over medium-high. Add high heat oil, then place the seasoned salmon fillets skinless side down. Sear undisturbed for 4 minutes, flip, and continue cooking an additional 3–6 minutes until just cooked through.
  6. In a mixing bowl, toss lettuce, spinach, and sprouts with a small amount of dressing.
  7. Lightly toast the buns in a dry pan or toaster until golden.
  8. Layer each bun with a blackened salmon fillet, cucumber slices, red onion, and dressed greens. Drizzle with additional dressing as desired. Serve immediately.
