Description

As a busy mom, I know how precious time can be, especially when it comes to whipping up something delicious. That’s why I’m excited to share my recipe for Blackberry Cheesecake Brownies. These delightful treats are the perfect blend of rich, fudgy brownies and creamy cheesecake, all swirled together with luscious blackberry preserves. Whether you’re looking to impress guests or simply want a sweet escape after a long day, these brownies are a quick solution that will leave everyone asking for seconds. Trust me, they’re a dessert you won’t want to miss!

Ingredients

Scale
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 8 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/4 cup blackberry preserves
  • Fresh blackberries for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.
  2. In a medium mixing bowl, combine the melted butter, 1 cup of sugar, eggs, and 1 teaspoon of vanilla extract. Stir until well blended.
  3. Add the cocoa powder, flour, salt, and baking powder to the wet mixture. Stir until just combined, being careful not to overmix.
  4. Pour the brownie batter into the prepared baking pan, spreading it out evenly.
  5. In another mixing bowl, beat the cream cheese, 1/4 cup of sugar, egg, and 1/2 teaspoon of vanilla extract until smooth and creamy.
  6. Spoon the cheesecake mixture over the brownie batter in dollops, then use a butter knife to gently swirl the two together.
  7. Warm the blackberry preserves slightly in the microwave, then drizzle it over the cheesecake layer. Use the knife to swirl the preserves into the batter, creating a marbled effect.
  8. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs. Allow the brownies to cool in the pan before cutting into squares.
  9. Garnish with fresh blackberries if desired.

Notes

  • Ensure the cream cheese is softened for easy mixing.
  • Do not overmix the brownie batter to keep it fudgy.
  • Adjust the baking time based on your oven for best results.
