Delicious and festive Birthday Cake Cinnamon Rolls, perfect for celebrating special occasions with a sweet twist.

- 4 cups all-purpose flour
- 1 packet (2 1/4 tsp) instant yeast
- 1 cup warm milk
- 1/4 cup unsalted butter (melted)
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 2 large eggs
- 1 tablespoon vanilla extract
- 2 teaspoons cinnamon
- 3/4 cup brown sugar (packed)
- 1/4 cup unsalted butter (softened, for filling)
- 1 1/2 cups powdered sugar
- 2 tablespoons heavy cream
- 1/2 teaspoon almond extract (optional)
- 1/4 cup rainbow sprinkles
Instructions
- Warm the milk and melted butter together until just warm—not hot. Stir in sugar and sprinkle yeast over the top. Let it sit for 5–10 minutes until foamy.
- Add eggs, vanilla, salt, and flour. Mix until dough forms, then knead for 6–8 minutes until smooth and elastic. Let the dough rise in a warm place until doubled (about 1 hour).
- Roll dough into a large rectangle. Spread with softened butter, then mix and sprinkle brown sugar and cinnamon evenly across the surface.
- Roll dough tightly into a log and slice into 12 even rolls. Place in a greased baking dish. Cover and let rise again for 30–45 minutes until puffy.
- Preheat oven to 350°F (175°C). Bake rolls for 20–25 minutes, until golden and the centers are cooked through.
- Whip powdered sugar, cream, vanilla, and almond extract into a smooth frosting. Spread over slightly cooled rolls and top with sprinkles.
Notes
- For best results, use room temperature eggs.
- Make sure the milk is warm but not hot to avoid killing the yeast.
- Feel free to substitute the almond extract with more vanilla if you prefer.
